Zucchini Soup is great, cook your zucchini in chicken or vegie stock, blend it, I use a stick blender in the pot, then grate in cream cheese as you serve it. That's it.

My DH loved it and so did it.

That's what I'll generally make too. When it's zucchini season, we get an abundance from the neighbours and family. I hate zucchini slice (I must be alone here, it's suggested a lot on EB), it's a watery, tasteless boring thing to eat IMO.

I also like the old fashioned tomato and onion bake with zucchini added (and topped with breadcrumbs).

Or, I'll grate it into bolognaise sauce and use for spag bog or lasagna.

I feel quite restricted with zucchini, it's probably my least favourite vegetable.

Cut them in half
Hollow the out
Combine the inside with chopped onion, tuna and cottage cheese.
Replace and bake in oven.

You can use other ingredients, different cheese or tomato flavoured tuna etc...

Yum yum yum

Zucchini stuffed with rice/mince/spices/garlic and zucchini sauteed with eggplant, sweet potato, olive oil, salt and pepper and sticky lamb ribs.

Big ones - do baked zucchini

Sliced in quiche or frittata, strifrys

Grated in spag bog, sang choi bau, meatloaf, other mnce dishes

Sliced into thin strips & lightly steamed they make a good substitute for spaghetti

Sliced and fried in butter

Zucchini is one of my favorites original.gif its very versatile

Nigel Slater's zucchini, feta and dill fritters. They're absolutely delicious.

Haven't got time to find my recipe but if you Google it you should be able to find it.
