This one doesn't have pastry, but it does have flour in the mixture so if you're wanting a coeliac safe one you just need to use GF flour instead. It makes no difference to the end result. It is SO quick and easy...
1/2 cup self-raising flour
1 cup grated cheese
1 tablespoon oil
1 1/4 cups milk
1 onion, finely chopped
2 rashers bacon, finely chopped
S&P to taste
Turn oven to 180C, grease quiche dish and place it in the oven while you make the filling.
Place all ingredients except bacon in food processor or large bowl, and either whizz for 30 secs or whisk briskly until combined.
Pour mixture into hot quiche dish, evenly sprinkle over the bacon and any other fillings you like eg mushroom, tomato, spinach etc.
Bake for 25-30 minutes, or until golden and mixture is set.
Well firstly - I don't like quiche. BUT I just used your recipe to make some lunch for DS, and it was freaking tasty!
I added mushrooms and parsley, and used vintage cheese...was so good!
