I have some chicken breast and i have no idea what to make tonight, any ideas on a quick and easy chicken meal for dinner tonight?

Get DH/DP to BBQ them. Marinate first in lemon juice, garlic, olive oil, S&P and parsley. Make a salad, mash some potatoes.

eta: open a chilled bottle of Chardonnay to go with it.

cut them in half so they are nice and thin, pop them in a plastic bag and bash with a rolling pin to flatten out. dip them in flour, then egg then bread crumbs and cook (either shallow fry or bake)
whilst they are cooking reduce a tin of diced tomatoes and an onion down into a yummy tomato sauce.
pop some sauce on cooked chicken, grate some cheese over the top and brown in the oven

Im making chicken enchiladas tonight.

But quick and easy would be cut in half (butterfly style), drizzle with olive oil, lemon juice and oregano, let marinate 10 mins and grill on the health grill. Add a chopped salad and voila! Dinner!

I'm doing Moroccan Chicken tonight.

Marinate chicken in 1tbs Moroccan seasoning, zest of 1 lime and a minced garlic clove for one hour.

Then I have chopped up potato, sweet potato, zuchinni, red capsicum and a red onion. I will roast them then bake the chicken and serve with cous cous and mint.

One of my go-to dinners when I'm feeling super lazy:

Halve a chicken breast lengthways. Season with salt and pepper, fry on both sides til golden (but not cooked through, just a couple of minutes).

Remove to a baking tray, spread each chicken piece with some pesto (basil and sundried tomato are both nice) then top with cheese (I like Swiss best).

Bake in a rather hot oven for 5-10 minutes until the chicken is cooked through and the cheese is melted.

Serve with salad, vegies, whatever.

My mums chicken in pjs:
50g butter, melted, 2tbsp worcestershire sauce, 1 tsp Dijon/French mustard, 1 glove garlic, finely minced.
Mix above ingredients together, then place in deep baking dish. Add chick & turn to coat.
Mix 2 large handfuls fresh breadcrumbs, 2 rashers bacon chopped, 1 small handful finely grated parmo & 1 small handful finely chopped parsley scatter on top then bake 20-40 mins, approx 180.
