We are going to a get together on Saturday for a park lunch, BBQ facilities are available. Some of these ladies can put on a good spread so I would like to take something a little less common than your bog standard salad.
Hit me with your fave designed to impress dishes. I will shop for ingredients tomorrow and put together Saturday morning.

My fave salad at the moment is Pea, Fetta and Spinach.

You cook frozen peas, drain and rinse in cool water.
Plonk them in a bowl, throw in spinach leaves, chopped mint and crumbled fetta. Dress with lemon and olive oil. It's so yummy! It's good with bacon, cooled chicken or grilled salmon but totally fine as is.

Make a frittata mix and cook in muffin tins. Spray muffin tin with canola spray.
Fill mufffin holes 3/4 of the way with roast potato & pumpkin pieces, chopped sundried tomatoes, fetta, olives and spinach leaves.
Mix 8 eggs, 1/2 cup of cream, 1/2 a cup of flour and a cup of grated tasty cheese in a jug and pour over other ingredients.
Cook at 180 for about 25 minutes.
Take a relish to serve with.

I make bocincini sticks, thread baby bocincini, fresh basil, roasted red pepper and cherry tomato on cocktail sticks and serve with around a small bowl of balsamic vinegar.

Really easy and always go down a storm.

Self Raising Flour. I make these hen ever we have a roast with the left over veggies, so easy and yum and you can put anything in - corn, peas, broccoli, mushrooms...
