OMG yuuuummmmm.
From here I am very much enjoying this clean eating thing ************ So after quite a bit of experimenting I have found that substituting pumpkin seeds (pepitas) for the nuts, and Unhulled Tahini (which is sesame spread) for the peanut butter works as well. At first I left out the choc chips but upon further testing, I've found that the way they melt into the mixture a bit during the mixing of the dry and wet ingredients actually helps a lot with preventing the muesli bars from crumbling later. I've also found that puffed wheat stays in the bars much better than the puffed millet (probably due to size I'm guessing). So now the kids have a nut free version to take to school, and a nut version they can eat at home... they seem to prefer the nut version but that hasn't stopped them from eating the entire nut free tray in less than a week. Hope that helps Further edit to add - they do cost a bit to make if you buy all organic ingredients, I have to admit that not all mine are organic. Mine probably cost about 70c a bar. Yum! I've made a similar recipe, minus nuts so they didn't cause a problem with kindy.
My issue was that when the warm ingredients mixed with the grains and chocolate chips, all the chocolate chips just melted. |

I got all excited seeing them, then realised they had peanuts in them, thought never mind, I'll work around that - then got to the peanut butter too. It is really difficult to make really healthy things that the kids can take to school, I made a whole batch of muffins the other day and then realised they couldn't take them as I'd put LSA in - no nuts at all allowed. Oh well, more for me!

Yeah the kids can't take them to school. But I am going to experiment with some other things to replace the peanut butter now that I know they come out okay. Then you can just leave out the whole nuts too.
