I was wondering if anyone had a yummy recipe for hash browns, I have one, but it involves a lot of work, and I simply can't be bothered.

I have one that is also very yummy, but, a lot of work. If you want easy, then just buy them already made tongue.gif

I do use my food processor to make it a bit easier, grating all those potatoes by hand is a PITA.

I have to buy a new food processor. Either my DH or I put the bowl on the bottom draw of the dishwasher, and it has distorted out of shape, and given that it is over 10 years old now I don't like my hopes of finding a bowl that will fit.

Not quite hash browns, but maybe try a rosti recipe? Very easy, very delicious!

Process peeled (or unpeeled, but washed/ scrubbed) potatoes in a food processor on the grating part (or just grate them!) and in a large bowl, mix in an egg (though not essential), some diced bacon or onion, a small amount of chopped herbs, such parsley and some grated cheese. In a heated fry pan, put in some olive oil and put in a few tablespoons of potato mix, then press it into a flat round shape, and fry til potato starts to become cooked and brown, and turn over and do the same on other side!

I have another roesti recipe which is yummo!

Peel and grate potatoes. Put them in some kitchen paper or a tea towel (but if you use a tea towel, make sure you wash it or soak it straight away as something in the spuds (the iodine?) will stain the tea towel black/brown!). Squeeze the grated potato until it is dry and flakey.

Heat some oil (unfortunately it has to be a decent amount to make the roesti golden and crunchy ohmy.gif ) in a frypan. Put the spuds in and fry over medium heat until the bottom is golden brown and 'set'. Then flip it over and repeat. You can tell when the potato is cooked because it will be easy to put a knife into the roesti. You can sprinkle a bit of salt over the potato if you like too...

Hmmmm yummo, think I'll have to put these on the menu plan for the week somewhere....

Thank you for your help, girls.

I found a recipe on the internet last night, and it was quite yummy. It would have been much easier had I had a food processor that worked. I had to grate it by hand. But it was worth it. DS didn't eat them, but DH enjoyed them.

It's actually the first time I have made them ever, so much nicer than the bought ones. They deep fry them in beef fat, and you can taste it.

Drats, sorry, I didn't make it back with my recipe, although, it sounds like you found a good one anyways. Have to say that that those roesti recipes sound absolutely delicious and basically the same as my hash brown recipe, only minus everything, but, the potatoes, onion, salt, and pepper. Not really worth posting it now, LOL.

One thing, I always squeeze my potatoes by hand over the sink, I find paper towel always gets all over my potatoes and I don't like using tea towels. I do it in small batches as well, so it is a slow process, but, it does work really well.

Thanks for the tip on squeezing the spuds Autumn74!

I've found that "Viva" paper towelling is pretty good and doesn't break apart!
