Hi
DH gets a Ham from work each year and this year I am hosting Christmas dinner so decided to do a baked ham. Does anyone know how to do this? Ie how long to bake it? What to decorate it with? And how to make the glaze. OK, since no one else has posted this is what I do (I do ham, turkey and roast beef every year).
- peel skin off ham, very carefully, keep the skin as you can use it to cover any left over ham. - Trim excess fat, you don't ahve to do this but I just hat fat. - Cut the remaining fat so that you have diamond shapes on teh ham, I hope you know what I mean, if not I can explain further. - at the corners of the diamonds insert a clove - brush ham with glaze, consisting of: honey, maple syrup, sherry, five spice power (not too much), light soy sauce. - Bake in a moderate oven, depending on size. I usually do it for at least two hours covered in foil. When almost ready to serve I take off the foil t make sure it's browned enought and rest for at least 20 minutes that way the ham will retain juices. Try to brush the ham every half hour with glaze. Left over glaze can be reduced/cooked in a pot on the stove to make a sauce for the ham. This is a recipe that I made up (sometimes I put orange juice in the glaze as well), friends and family seem to like it. We did this last year and it was a big success
HONEY GLAZED HAM 15 mins prep, 40 mins cooking, 15 mins resting 3kg semi-boneless shoulder ham ½ cup or 100g brown sugar ¼ cup or 60g honey 1 tablespoon Dijon mustard Whole cloves to stud Preheat oven to 210oC. Put oven shelf in lowest position and remove other shelves. Use a sharp knife to cut rind around ham shank 10cm from the end in a zigzag pattern. Run your fingers between the rind and the fat where still joined and gently lift rind off in one piece. Use a sharp knife to score fat in diamond shapes 5mm deep. Pour a small amount of water in a roasting pan. Put ham on wire rack in pan. To make the glaze, combine brown sugar honey and mustard. Brush half the glaze over ham coating evenly. Stud each diamond with a clove. Bake basting ham every 10 mins with remaining glaze for 25-35 mins or until golden. Remove from oven. Rest for 15 mins before carving. |

We decorate our ham using pineapple rings and glace cherries, and use toothpicks to hold them on.
And our glazes we change each year, one of our fav's is HONEY GLAZE ½ cup honey ¼ cup brown sugar 1 teaspoon soy sauce 1 teaspoon dry mustard 1 tablespoon brown vinegar Put remaining ingredients for glaze into bowl, stir until combined. Put ham into large baking dish, brush well with glaze. Put in moderately hot oven, cook approximately 30 minutes or until ham is golden brown; brush frequently with honey glaze while cooking. Decorate ham with whole cloves and halved glace cherries (put halved toothpicks into ham, press cherries on to toothpicks). Warmd, sieved apricot jam also makes a simple but delicious glaze for ham. Apply and bake as or Honey Glaze. Another nice one is orange juice and honey mixed to taste. |
