preschool lunch next week, needs to be a healthy option, and i've put my hand up to make savoury muffins. would like to avoid ham/bacon, i'm fairly sure we have at least one muslim child in the class (and i hate not catering for everyone).
any yummy, scrummy, easy to make savoury muffin recipes you'd like the share? |

|
I have used this recipe Cheese and chutney mini muffins and the kids and adults loved them. I also followed the tips in the comments and added more chutney feta and Parmesan.
My DH was skeptical of savory muffins, but really enjoyed them. I used a spicey sweet tomato chutney. |

This is my tried and true muffin recipe, which I got from an EB friend. This one never goes wrong, ever, once you get the timing right for your oven. This is a sweet muffin recipe but you can see at the bottom that you only need to omit the sugar to make it savoury. The baked beans muffin option listed is a big hit at our place.
HTH. QUOTE LELLEN’S BASIC SWEET MUFFINS
Ingredients • 2 cups self raising flour • 125 grams butter • 1 egg, lightly beaten • 1 cup milk • ½ cup brown sugar • ½ - 1 cup filling (as desired) eg. choc chips, pie fruit etc. Method 1. Preheat oven to 200 o. 2. Sift flour and sugar into large bowl. 3. Combine egg and milk in large jug. Melt butter and add to jug. 4. Add liquid ingredients to dry mix. Stir until well combined (don’t over-stir). Add filling ingredients once mix mostly combined. 5. Bake for 20 minutes (large Texas muffins, decrease to 15 minutes for 12 smaller muffins). Note • Omit brown sugar for savoury muffins. • For baked bean muffins reduce milk to ¾ cup and add 220 gram tin of baked beans, sauce and all. Add extra milk if required after adding beans. |
