Tonight I have 250g of chicken mince to make dinner for 5 people. I was thinking of making chicken and vegetable sausage rolls, but don't think the meat will stretch quite that far. I often throw some lentils in with beef mince to make it go further, is there something you use to make chicken mince go further? Do you think some puréed cannelini beans would work?

maybe both, and spinach.

I think pureed beans will be too sloppy

i'd bulk it out with carrot, zucchini etc, or ricotta works well too (get the firm one from the deli though)

Thanks for all of the ideas.
I have made the mixture up with chicken mince, grated celery, carrot, zucchini, chopped onion, chopped rocket, crumbled feta, mustard and breadcrumbs. I hope it tastes good!
