I made a cottage pie last week from my left over roast.
Just the same as a Shepherds Pie but using beef not lamb.
Soften some onions and garlic, finely chop your roast beef, add chunks of vegies (I used carrot, mushroom, cauliflower, beans) add stock, a tin of tomatoes any gravey you had left over, some herbs and simmer for 30 mins or so.
Top with mashed potato dotted with butter and bake in the oven for a further 30 - 35 mins
That sounds yum, Countrymel. I have no gravy left over except for the 'gravox' I made. And how much stock?
I seriously suck at cooking. One of the reason I bought the slow cooker!
