|
Made roast beef in the slow cooker the other day. Got the timing a bit wrong and it came out a bit dry but was still.
Now I have these left over chunks (becasue I couldn't slice the roast properly) and not sure what to do with them, especially to put some moisture back in. Any ideas appreciated, thanks |

I made a cottage pie last week from my left over roast.
Just the same as a Shepherds Pie but using beef not lamb. Soften some onions and garlic, finely chop your roast beef, add chunks of vegies (I used carrot, mushroom, cauliflower, beans) add stock, a tin of tomatoes any gravey you had left over, some herbs and simmer for 30 mins or so. Top with mashed potato dotted with butter and bake in the oven for a further 30 - 35 mins |

I seriously suck at cooking. One of the reason I bought the slow cooker! |

I too would go with pies - but my mum also used to always make a curry sauce for leftover roast beef when we were kids.

Roast beef and gravy rolls. We always make a bigger roast so we can have these for lunch or dinner the next day...

I always put it in the food processor and mince it and make tacos.
You just don't need to brown it as you would mince as it's already cooked so just skip to add the taco seasoning. |
