> Best vegetables for Thai green thing?

Soft kitty, warm kitty, little ball of fur.
We've bought a box of Thai green stirfry/curry stuff because I've been having hankerings for rice dishes.


It comes with bamboo shoots, and says "add own favourite vegetables"

Now, what I want to know, is what vegetables would be best? If there's nothing in particular, I'll just buy a bag of woollies 1 minute stir fry vegetables and leave it at that, but if there's 1 or 2 that would be extra good, I'd like to have those instead!

If it makes any difference, it says "preferred meat" (chicken for us) and "coconut milk" as well Tounge1.gif

It's not the traditional Thai thing, but my absolute fave veggie for thai curries is mushrooms - they just absorb the flavour so well.

I also use bok choi and snow peas (snow peas added literally 3 minutes before serving)

3 is the number for me
I like eggplant, zucchini, green beans, baby corn, brocolli and sometimes mushroom and bamboo shoots. yyes.gif

I like green beans, eggplant and pumpkin in my green curry. But don't add them too early...they need to keep a bit of firmness to them (not mushy).

Snow peas and bok choi sound really good! Even if I just steam them a little rather than putting them into the sauce to have "on the side"
