I make the worlds most amazing banana bread (even if I say so myself biggrin.gif ) but I have failed to master banana muffins no matter what recipe I follow! sad.gif

What is your best banana muffin recipe?

I use the same recipe for banana muffins as I do for banana cake and just adjust the baking time and temperature (15 minutes at 180 degrees as opposed to 45 minutes at 160 degrees).


I would love to see your banana bread recipe though wink.gif

I find the best banana muffins happen when I use par-frozen bananas and blend them in the food processor with the sugar and butter right at the begining. It kinda turns into banana ice cream, then I throw everything else in quickly and bung them in the oven while the mix is still icy cold. For some reason they turn out delicious this way!

I too use the same recipe for muffins and bread mind you, adjusting cooking time and temp as necessary.

I made some awesome banana muffins last week but just made them up as I went along so don't have any measurements written down! I do remember most of it, 125g of butter and some sugar (maybe 3/4 cup), creamed together. Added 2 eggs and beat them in. Added vanilla and 3 mashed up bananas, mixed that in. Then I lightly folded in SR flour until just combined. Oh and a sprinkle of cinnamon in the flour as well. Baked them about 20 mins on 180

My recipe is very similar to MISS_E's except I use brown sugar, makes it more caramelly.
