sanity is over-rated
i want to put the slow cooker on tomorrow but i am already pressed for time in the morning so would love to prepare it tonight but it would need to sit on the bench over night as there is no room in the fridge for it.

It would include:

mix
water
sweet potato
beans
onion
snags (these could probably be left in the fridge overnight and thrown in the cooker in the morning)

umm i think thats it off the top of my head...

would it be ok all chopped up and prepared in the slow cooker so i only have to set the timer and go?

I would probably leave out the water and sausages until you go to start it in the morning, but the rest of it should be fine.

I would put it all in a container and put it in the freezer then pop it in the slow cooker in the morning. I do this often - put the meat, mixture, veg etc in the freezer and then put it in the slow cooker (solid!) in the morning and it's all good.

Yep. I'd leave it all out over night (covered) except the snags which you could cut up tonight and then put in the fridge. I might add the mix and the water in the morning though so the veges don't go mushy.

Most of the items you have listed wouldn't usually be kept in my fridge anyway.

The other alternative would be to put it on to cook tonight and then put the cooked meal in the fridge in the morning. Will then also allow the flavours to develop without over cooking it all. You can reheat at dinner time.
