What would you make?
I've already planned a lemon yogurt cake and was thinking of making some lemon curd, I've only made a small batch before, how long can you keep curd?
Any suggestions appreciated!! Especially if they're freezable

My mum makes bottle of lemon cordial with her excess lemons. By all accounts it's delicious!

Juice, then pour into ice cube trays, once frozen, remove from tray and place into ziplock bags. Keep in freezer and use as required. Perfect for adding to glasses of water on stinking hot days...

Great idea! Can they be thawed and used for anything? Cakes etc?

I think so, I personally haven't done it but my In-laws did last year when our lemon tree over-fruited. I personally can't see it being a problem, the cubes would just de-frost back to a liquid....

Inthe fridge it keeps a reasonable length of time, months rather than weeks. In sterilised jars it would keep even longer.

Lemoncello - basically its vodka + lots of lemon zest. Leave it for a a few months then remove the zest.

DH loves Vodka, lime juice and soda water. Once my lime tree takes off I'll do this :0

The first thing that comes to mind is lemonade. Though I know you're really asking for something not lemonade haha.
Lemon icebox pie:graham crackers as crust
500g cheesecake, softened
1 can of sweetened condensed milk
zest and juice of 3 lemons
Beat cream cheese until fluffy. Add the condensed milk, zest and juice and mix until smooth.
Pour mixture into crust and refrigerate at least 2 hours before serving. Optional: add whip cream before serving.
Easy, huh.

I feel your pain. We also have too many lemons. But luckily I need to make a lemon cheesecake for the weekend, which I will make using one of the recipes provided on my post.
I always have lots of lemons and usually juice some and freeze in ice cube trays as mentioned, give lots away, make lemon muffins or cake, I don't make preserved lemons becuase I dont like them but I know other who do.
I will try to lemon ricotta muffins listed on the side of this as well. Good luck
