Hi all

I confess to loving packet mac & cheese but can't bring myself to feed it to our twins.

Can someone help me out with a tried and tested recipe?

I use this one, it is not a traditional mac cheese recipie as I hate white sauce, this one has tomato based sauce and is one of my kids fav's- sorry for old school measurements it is my mums old recipe and I have been making it so long I have never converted it:

6 oz macaroni
3 oz butter
1/4 cup plain flour
1 teaspoon dry mustard
1/4 teaspoon of paprika
1/3 pint of milk
6 oz cheese grated
1 can of tomato soup (I use condensed)
1/4 lb bacon diced
1 onion diced
1 green capsicum diced

Cook macaroni in boiling water until tender and then drain

Fry bacon, onion and capsicum, then add to the macaroni in a large bowl.

Melt butter in saucepan, remove from heat, stir in flour and seasonings to create like a rue. Then return to a low heat and cook for 1 min, and then gradually add milk stiring constantly, until it thickens. Remove from heat, added grated cheese and soup mix, then mix well. Put back on stove and heat gently for cheese to melt thru.

Then add that to the macaroni and other stuff and mix all up, pop in a dish, sprinkle with cheese and back in moderate oven for about 20 mins.

This also freezes fine, I usually make a ton of it and freeze of portions (as everytime I make it I make some for my sister as well cause she loves it).
