I am going to make this and am just reading through the recipe. Im not sure excactly to do with the cherry ripe, do I chop it, melt it, what?? And also i brought coconut cream instead of cocnut milk, do you think that will be ok??

Any suggestion would be great!

I would say that the cherry ripe bars are diced/chopped as it would be pretty hard to mix entire bars through a cake biggrin.gif

The coconut cream is probably ok - it may depend if it is runny or thick. If it is a little thick you may want to substitute a little water or milk with it to thin it down.

I made this a few years ago. I just chopped up the cherry ripes - Yummo.

I can't see why it wouldn't work with the coconut cream, but like Twinboys said it might need thinning down.
