Full Version: Dairy free tomato free vegetable soup

DS is on a vegie strike. I need to try and get some more in to him. I have a good pumpkin & sweet potato soup but I was hoping someone has a lovely vegetable soup that is not tomato based and is dairy free they would be willing to share? Preferably something I could puree as for some reason he doesn't like eating lumps in liquid.... rolleyes.gif

I dont have a recipe but could you use a vegetable stock as the base and then add any veg that you want?

This one is really good, but I have never used celeriac in it as it's so expensive. I just add a couple of celery stalks.

That's what we do. Stick blender to make it smooth. It's so easy.

I usually do a chicken noodle soup for the boys (esp Mr 5 who is very picky with his veggies) I do the stock with chicken fillet and as many veggies as I can then remove the veggies and add noodles.

Regarding veggies - I always have ice cubes of pureed veggies in the freezer (usually a combination of pumpkin, potato, carrot and sometimes zucchini and corn) I add them in anything I can. A good one is under tomato paste on a pizza or similar, or mixed in with tomato sauce with pasta.

Lol yes, tried that. One mouthful and out it went.
My problem I think is that I don't have a creative bone in my body. I need a recipe biggrin.gif
