Lullabelle's last thread on meal plans really inspired me to try some different things around here, and I'm sure I'm not the only one who found that thread useful. Perhaps we could post our weekly plans for this week, as well as our favorite recipe from it?

Our Plan (in no particular order):

Meatloaf and Spaetzle w/ Salad
Homemade Pizza (with a long-rise crust)
Tortilla Soup w/ baked torilla chips and sour cream
Chicken Salad Wraps
Sloppy Joes and Baked Potatoes w/ Peas

Dessert: Strawberry Bread
Homemade ice cream

My recipe selection to share:

TORTILLA SOUP

Ingredients
1 fully cooked chicken breast, cut up into bite-sized pieces or shredded with a fork

1/2 cup onion

1 stalk celery, chopped

2 (14oz.) cans chicken broth

1 (15oz.) can diced or stewed tomatoes

1 clove garlic, minced

1 (4.5oz.) can chopped green chiles

1/2 pkg. dry taco seasoning

1/2 cup sour cream

Saute chicken, onion, and celery until onion is translucent. Add remaining ingredients (except sour cream). Simmer 1 hour. Add sour cream and simmer an addition 15 minutes. Garnish with tortilla chips, shredded cheese, and sliced green onions. Serve with additional sour cream if desired.

Cook's Notes: I usually double this recipe; it makes great leftovers! I also usually "make" tortilla chips by cutting up a plain flour tortilla, lightly buttering one side, and "frying" it on a griddle until it's crisp.

Hmmm, good question! It's a sandwich filling, made to be served on a large roll. It is a real "quickie" type meal -- ground beef, chicken gumbo soup, ketchup, and mustard all mixed together for a tangy filling. They're definitely "sloppy" because the meat tends to squish out of the roll, but they're pretty tasty! The "Joe" part of the name might come from the fact that the idea for a sandwich like this came from the U.S. Army in the 1940s -- when a G.I. Joe (Army recruit) ate one, he was a "sloppy Joe." My version is very different from the original version, but I guess the name still fits!

(Do you have Chicken Gumbo soup there? Ours is made by Campbell's. It's vegetables, chicken and rice in a tangy broth.)

I was going to ask about the Sloppy Joe too!

Our plan has not gone past tonight:

DH's prawns in creamy tomato sauce with crusty bread and salad (not good for wallet or weight but SO yum!)
Thinking of:
Lasagne
Fried rice
Vege pasta with tomato based sauce
Lamb cutlets with cous cous and vegies
Vegetarian laksa

Hi all,

Duckling: thank you for reminding me about Sloppy Joes! (I used to have them at summer camp in the states about 25 years ago!)

Monday: Pate and toast
Tuesday: Sloppy Joes!
Weds: Dew fish and homemade wedges & salad
Thurs: Irish stew, jacket potatoes and veggies
Friday: Tandoori chicken and mango salsa & rice
Saturday: BLT's and chips
Sunday: Roast beef with all the trimmings

If anyone wants any of these recipes, let me know....

My meal plan for this week is:

Mon: Homemade Pizza
Tue: Pasta & jar of pasta sauce! My lazy night original.gif
Wed: Tamarind Chicken, corn on the cob and potatoes
Thur: Tofu & Pumpkin curry with rice
Fri: Pot roast with vegies and potatoes
Sat: Lentil "shepards" pie
Sun: Lamb sausages, baked beans and chips

Lucy - could you post the recipe for Irish stew? Thanks.

Thai chicken noodle stir fry
carbonara
asian chicken noodle soup
lasagne
silverside and roasted veg
bbq, salad and potato bake (i know its winter!!)
potato and bacon frittata and salad


trying to throw in salads to be healthy ha ha

i also liked the sound of that creamy chicken pata with sweetcorn!!, will you post it on here??

Irish Stew

500g lean lamb, chopped into chunks
1 onion, chopped into chunks
2 potoatoes, peeled and chopped into chunks
2 carrots, peeled and chopped into chunks
1 glass red wine
2 cups water
1 tablespoon worcestershire sauce
1 tablespoon mixed herbs
1 heaped teaspoon cornflour
1 packet/sachet of Gravox lamb Roast with Rosemary gravy mix

~ Chuck all the meat and veggies into a casserole or slow cooker
~ In a mixing jug mix all the other ingredients together so they are belnded
~ Pour over the meat and veggies
~ In a slow cooker cook on slow for 5 hours, or cook at 150`c in the oven for at least 3 hours

Check half hour before serving: if it needs thickening use a teasoon of cornflour blended with some of the liquid to thicken.

Tandoori Chicken

2 skinless chicken breasts
8 tablespoons of Tandoori paste (Pataks is a good brand)
1 pot of natural yogurt
1 mango, diced
1 large tomato, diced
1/3 of a cucumber, peeled and diced
2 spring onions, chopped

1. Cut the chicken breast into chunks (bigger than bite – sized)
2. Mix together in a bowl the Tandoori paste and the yogurt
3. Add the chicken and allow to marinade as long as possible (overnight is best)
4. Preheat grill to as hot as possible
5. Place all the chicken on a wire rack in the grill pan
6. Grill the chicken chunks until it’s blackened: it won’t taste burnt, it just brings out all the flavor and goes crunchy on the outside
7. Mix all the salad stuff together and spoon onto two plates
8. Add the chicken on top of the salad
9. Serve with rice and maybe some extra yogurt and mango chutney……………

Thanks for the Irish Stew recipe Lucy. Babypie - would you believe my mum has borrowed my book with the recipe in it and lost it!! sad.gif It's a really nice marinade too. I'll have to experiment and see if I can remember what goes in it (apart from tamarind obviously).

Monday, slowcooker lasagne
Tuesday, Scrambled eggs and baked beans on toast (couldn't be bothered yesterday blush.gif )
Wednesday, Marinated chicken on vegetables - another slowcooker meal
Thursday, Vegetable soup (yep you guessed it, go the slow cooker)
Friday, chicken, mushroom & leek pot pies (i'm finally gonna use the oven! LOL)

Creamy Pasta with Chicken and Corn

300g spiral pasta
Olive oil spray cooking oil
1 teaspoon minced garlic
6 green onions, chopped
400g chicken breast, sliced
150g button mushrooms, sliced
300g can creamed corn
100g sun-dried tomatoes
˝ cup chicken stock
˝ cup ultra-light sour cream

Cook pasta as on the packet.
Spray a non-stick frying pan with oil, Heat over a medium-high heat. Add garlic, mushrooms, onions and chicken. Cook for 10 – 15 mins until chicken is tender and cooked through. Add corn, sun dried tomatoes and stock. Simmer for 5 mins. Remove from the heat and stir in sour cream. Add drained pasta to the sauce and stir over a low heat to heat through. Serve immediately. (Yum) (My DS loves this!)
