I've been super organised this month, I actually sat down and did a month long one on New Years eve!
For this week starting tomorrow we have.
Sunday- crumbed chicken legs and steamed veges.
Monday- Roast Pork and roast veg
Tuesday- cold cuts and salad (from the roast pork)
Wednesday-Sausages, and veg
Thursday- Spaghetti bolognese
Friday- was fishcakes but forgot to grab Tuna so will be doing Prawn Curry with brown rice instead as I have prawns in the freezer.
Saturday- Pineapple Ham steaks from the Aldi cookbook. With minted peas and mashed potato.

Saturday: Spaghetti Bolognese (today is the day I make up about 20 litres of sauce to freeze)

Monday: Sausages and veg
Tuesday: Quiche
Wednesday: Pizza (home made)
Thursday: Grilled fish and salad
Friday: African casserole (made in bulk a few weeeks ago and frozen)
Pretty boring here, but DP is going away for the week and I don't want to be doing anything that takes a long time to prepare!

We are being tight with our money this year after starting our own business, I am menu planning fortnightly and grocery shopping to match. We are trying to get by on $400 per fortnight for a family of 5 including nappies and all toiletries/cleaning products etc.
Monday - Spaghetti Bolognaise
1kg beef mince + 1kg pork/veal mince - tin brown lentils - passata - tomato paste - garlic - grated carrot/celery - pasta (Make lasagne for next week - lasagne sheets - cheese)
Tuesday - Sausages in Gravy + MashPotato + Vege
700g thick sausages - gravy - onion
Wednesday - Oven baked Fish + Chips +Salad
Thursday - Meatloaf + Mash Potato + Vegetables
500g beef mince - breadcrumbs - onion - bacon - egg
Friday - Tacos + Wraps
500g beef mince - taco mix sachet - taco shells - soft wraps - diced tomato + cucumber - sour cream - cheese
Saturday - Chicken Schnitzel + MashPotato + Vege
chicken breast - breadcrumbs
Sunday - Chicken Kebabs + Rice + Vege

Tonight- Out for dinner but I already know what I'm having

I'm having double baked cheese souffle with salad. I love it so much I never order anything else.
Tomorrow night roast organic turkey on the weber with roast potato, pumpkin,peas,beans and carrots with turkey gravy.
Monday night- smoked chicken salad.
Tuesday- veg stir fry on brown rice.
Wednesday- kale and silverbeet pie
Thurday- BBQ rump steak with home made garlic butter and veg.
Friday- marinated pork fillets with potato & sweet potato bake and steamed veg.

My NY resolution is to stick to the meal plan, I plan fortnightly (as that's how frequently we go grocery shopping) and so far this fortnight I have managed to stick to it

I know it's only a small thing, but I am still very proud of us.
Lasagna with Pumpkin and Spinach Salad
Mediterranean Tuna and Rice Pie with Garden Salad
Massaman Beef with Rice (first time trying this recipe - not really authentic massaman, but a tasty curry nonetheless)
Pizzas w. garlic bread and salad (using leftovers from the Rice Pie and some Proscuitto and potoatoes)

Onyx - would you mind sharing your chicken skewer recipe? I have a mint plant that has gone out of control!
Am just starting to get back into meal planning after the busy holiday season, I've been travelling back and forth a lot which makes it hard to stay on track; I'm also now cooking for one instead of two, so it's tricky to find meals that make one serve/will store well as leftovers.

Monday: barbeque grilled porterhouse steak, garden salad
Tonight: grilled salmon (with crispy skin) marinated in lime juice and sweet chilli, with a salad of white quinoa, cucumber & dill with a light lemon vinaigrette.
Wednesday: chicken basil stirfry with snowpeas
Thursday: home marinated bbq pork ribs (rack, not spare ribs) with garden salad
Friday: asian vegetable soup with enoki mushrooms and lemongrass
Saturday: always left open.
Sunday: lentil and vegetable stew with parmesan.

Saturday: curry (make a huge batch and freeze)
Sunday: pasta bake or something from the freezer
Today I am making mini pizzas, muffins and fried rice for lunch boxes. I will also cut up carrot and celery sticks.
Being organised is making my week nights run so smoothly!

I'm buying a nice fresh bag of rice noodles on Monday (delivery day at my local Asian shop!) and then using them up in dishes with very different flavours...
Tonight: Vietnamese rolled rice noodles stir fried with beef and veggies
Thurs: Hunan-style beef with cumin on rice with stir fried greens on the side
Fri (lots of peeps over for dinner): a bit of an experiment! Slow cooked spice-rubbed pork shoulder, 'pulled' American style, mixed with a Chinese-inspired BBQ sauce; served in a baguette with a crisp coleslaw with a white miso & rice vinegar dressing. Bit of a US/Vietnamese/Chinese/Japanese combo... fingers crossed it works!
Sat: out
Sun: Chilli crusted chicken noodles. Utterly inauthentic but my ultimate comfort food - chicken breast slices coated with salt, chilli powder and cornflour and fried til crispy, tossed through with hokkein noodles and veggies in an oyster and mirin sauce. The two of us have given up entirely with this dish and just cook & eat for four!
Mon: Pad Kee Mao
Tues: Beef & black bean noodles
Wed: Singapore noodes: char sui and curry, how do I love thee? Let me count the ways...

I'm on weight watchers so am using their recipes to feed the whole family...was just on the site today to do some meal planning. I've also picked recipes that I think the younger children with actually eat.
