Has anyone made the tarte tartin they keep tempting me with there on the right?

In that photo the pastry looks sort of underdone.. is it meant to go crispy? I had a tarte tartin once a while ago and it was so delicious, I'm thinking of trying it myself.

It's pretty much my standard dinner party dessert!

So easy to prepare the apple part before, and then simply place pastry over the apples and bake in the oven, flip, and TA-da! Totally impressed dinner guests and sometimes even some naughty breakfast left over for the next day!

You really don't want a soggy, gluey, undercooked pastry. No, that ****er must be done crispy or it totally spoils the whole dish.

I like to add a sprinkle of cinnamon, and some sultanas, and some hazelnuts or pecans as well. Mmmmm....

Also does the quality of the pastry matter? I just use pampas for cooking, but my friend has introduced me to Careme pastry and Im dying to try it.
