Bacon and Pea Mini Meatloaves

Cooking time: 55 minutes
Ingredients
9 rashers bacon, cut in half
750g minced beef
2 cloves garlic, crushed
1 tablespoon chopped ginger
2 tablespoons Worcestershire sauce
2 tablespoons rosemary leaves
salt and pepper, to taste
1/1/2 cups breadcrumbs
1/1/2 cups frozen peas
1/1/2 cups parsley, chopped
3 eggs, lightly beaten
Method
- Pre-heat oven to 190ºC. Lightly spray two muffin tins with oil (large enough trays to make 18.) Line 18 muffin holes with bacon slices so they hang over the sides.
- Place mince, garlic, ginger, Worcestershire sauce, rosemary, salt and pepper, breadcrumbs, peas, parsley and eggs in a bowl and mix well.
- Press on top of bacon then fold over to enclose. Place in oven and bake for 20-25 minutes.
- Gently remove from trays and serve with salad.
Makes 18 mini meatloaves. Any left over meatloaves can be wrapped in cling wrap and frozen for another time.
