Baked Herbed Feta

300 g (10½ oz) piece of feta cheese
1 tablespoon chopped rosemary
1 tablespoon chopped oregano
1 tablespoon chopped thyme
2 tablespoons olive oil

 

 

Method

  1. Preheat the oven to 180°C (350°F/Gas 4). Put the feta on a piece of foil about 30 cm (12 inches) square. Mix together the rosemary, oregano and thyme, and press onto the sides of the feta. Drizzle with the oil and season to taste with freshly ground black pepper. Gently fold the sides and ends of the foil over to make a parcel.
  2. Place on a baking tray and bake for 10–15 minutes, or until the feta is soft. Drain off any excess liquid before serving. Serve hot or cold, with bread or as part of a cheese platter or salad.

NOTE: If the piece of feta is thick, it may need an extra 5 minutes in the oven to heat through.

STORAGE: Cover any leftovers with plastic wrap and store in the fridge for up to 2 days.
