Baked Peaches

4 ripe peaches
40 g (1½ oz) amaretti biscuits
1 tablespoon sweet Marsala
20 g (¾ oz) ground almonds
1 egg yolk
1 tablespoon sugar
25 g (1 oz) unsalted butter
icing (confectioners’) sugar

Method

  1. PREHEAT the oven to 180°C (350°F/Gas 4). Halve the peaches and remove the stones. Crush the amaretti biscuits in a food processor or with the end of a rolling pin and mix them with the Marsala, almonds, egg yolk and sugar.
  2. FILL the peaches with the biscuit mixture, spreading the filling in an even layer over the entire surface. Dot each peach with butter and arrange in a shallow ovenproof dish or baking tray. Bake for 20–30 minutes or until the peaches are tender right through. Dust lightly with icing sugar before serving.

THE PEACH IS ONE OF ITALY'S FAVOURITE FRUITS, WITH THE BEST BEING PRODUCED IN LE MARCHE, EMILIA-ROMAGNA AND CAMPANIA. THIS RECIPE ALSO WORKS WELL WITH FRESH APRICOTS. ALLOW THREE APRICOTS PER PERSON.
