Broccoli with shallots and almonds
A delicious side dish to complement any meal.

2 heads broccoli, florets only.
1 tbsp olive oil.
6 shallots, peeled and roughly chopped.
1/2 cup flaked almonds.
Steam the broccoli until just tender but still crisp (about 4 minutes). Meanwhile, heat the olive oil in a frying pan, add the shallots and cook, stirring, until soft. Add the almonds and cook until golden brown.
Place the broccoli in a serving bowl and top with the shallots and almonds. Squeeze over fresh lemon juice to taste and season.
