Candied sweet potato

- 800 g sweet potatoes
- 90 g butter
- ½ cup brown sugar
- 1 tablespoon lemon juice
- ½ cup orange juice
- 1 cinnamon stick
- 2 teaspoons grated lemon rind
1. Peel sweet potatoes and cut into thick rounds. Arrange sweet potato in a casserole dish, pour melted butter over the top.
2. Add sugar, lemon and orange juices and cinnamon stick.
3. Cover with a lid or aluminium foil and bake at 180°C for about 30 minutes. Uncover, stir potato mixture gently, remove the cinnamon stick, sprinkle on lemon rind and cook uncovered a further 15–30 minutes to crisp the top.
