Carrot and Almond Salad

Ingredients

4 large carrots
2 tablespoons peanut oil
1 teaspoon caster (superfine) sugar
½ teaspoon brown mustard seeds
¼ teaspoon curry powder
2 tablespoons lemon juice
25 g (1 oz/¼ cup) toasted flaked almonds
1 large handful coriander (cilantro) leaves
3 tablespoons thick plain yoghurt

Method

 

  1. Heat the grill (broiler) to medium. Slice the carrots thinly, on the diagonal. Put 1 tablespoon of the oil in a bowl, mix in the sugar, then add the carrot and toss to coat. Spread the carrot on a baking tray and grill for 10–15 minutes, turning occasionally, until lightly browned and tender. Remove from the heat and leave to cool, then place in a bowl.
  2. While the carrots are grilling, heat the remaining oil in a small frying pan. Add the mustard seeds and curry powder and cook over low heat for 1 minute, or until fragrant. Allow to cool a little, then whisk in the lemon juice and season to taste.
  3. Drizzle the spice mixture over the carrots, add the almonds and coriander and toss gently until well combined. Serve at room temperature, with a dollop of yoghurt.
