- Preheat the oven to 180°C (350°F/Gas 4). Trim the chicken of any excess fat and place in a shallow dish. Combine the honey, mustard and soy sauce and pour over the chicken, tossing to coat evenly. Cover and refrigerate for 2 hours, turning once.
- Place the onion wedges and tomato halves on a baking tray covered with baking paper. Sprinkle with the sugar and drizzle with the balsamic vinegar. Bake for 40 minutes.
- Heat a chargrill pan and lightly spray with oil. Remove the chicken from the marinade and cook for 4–5 minutes on each side, or until cooked through. Slice the chicken and serve with the tomato halves, onion wedges and basil.
