Cheeseburger rice bake

This dish is a winner with the kids. It has all the flavours to remind them of a favourite burger and smells delicious while cooking building up their appetite! For parents it is a super easy dish to cook and can be made in 30 minutes from ingredients you will most likely have on hand.

Ingredients

1 tbsps. coconut oil (or preferred cooking oil)

500 grams minced beef

1 large onion

3 tbsps. tomato paste

2 tbsps. Dijon mustard

1/2 tsp. sea salt

1 cup basmati rice

1 cup grated tasty cheese

 

Method

Begin cooking rice by your preferred method.

While the rice is cooking, finely chop the onion. Heat oil in a large frying pan and add the onion to the pan and fry the onion for a couple of minutes until it becomes transparent.

Add mince to the pan, breaking it up as you cook it.

Once the meat is cooked add tomato paste, mustard and salt, then cook for another couple of minutes, stirring until well combined.

Heat the grill to high.

Add 3 cups of cooked rice to the meat mixture and stir well. Pour the cheeseburger rice into a large ovenproof dish. I use a standard lasagne style dish.

Sprinkle the cheese on top and place under the grill for a couple of minutes or until the cheese has melted and turned golden.

Allow to sit for a few minutes before serving. Serve with a side of leafy greens and enjoy.

Note: This recipe is easy to make for larger crowds as you can simply double the ingredients.
