Chicken and green bean salad

You can use minced (ground) beef or pork instead of chicken, if you prefer.

Ingredients

  • 400 g (14 oz) minced (ground) chicken
  • 1 onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 lemon grass stems, white part only, finely chopped
  • 2 makrut (kaffir lime) leaves, finely chopped
  • 1 small red chilli, seeded and finely chopped
  • 2 tablespoons peanut oil
  • 1 tablespoon grated palm sugar or soft brown sugar
  • 1 teaspoon ground turmeric

Salad

  • 500 g (1 lb 2 oz) green beans, trimmed and cut into 1 cm (½ inch) lengths
  • 30 g (1 oz/½ cup) shredded coconut, toasted
  • 4 garlic cloves, sliced
  • 4 red Asian shallots, halved and finely sliced
  • 2 large red chillies, seeded and cut into thin strips
  • 1 makrut (kaffir lime) leaf, finely shredded
  • 1 large handful coriander (cilantro) leaves
  • 2 tablespoons peanut oil
  • 2 teaspoons sesame oil
  • juice of 2 limes
  • 2 teaspoons grated palm sugar or soft brown sugar
  • 1–2 tablespoons fish sauce

Method

1. Put the chicken, onion, garlic, lemon grass, lime leaves, chilli, oil, sugar and turmeric in a large bowl. Mix well to combine and season with salt and pepper. Lay a piece of foil on a flat surface and top with a sheet of baking paper. Place half the chicken mixture lengthways in the centre and roll up tightly to form a log shape. Repeat with the remaining mixture to make two logs.

2. Place the parcels in a single layer in a steamer and cover with a lid. Sit the steamer over a wok or saucepan of boiling water and steam for 20–25 minutes, or until the chicken is cooked through. Remove the parcels from the steamer and set aside to cool slightly.

3. To make the salad, place the beans in the same steamer and steam for 5 minutes. Refresh under cold water. Combine the coconut, garlic, shallots, chilli, lime leaf and coriander in a salad bowl. Unwrap the chicken and break up with a fork to its original minced form. Stir the chicken and beans through the salad mixture.

4. Combine the peanut and sesame oils, lime juice, sugar and fish sauce in a jug. Pour the dressing over the salad and toss to combine.
