Cottage Cheese Salad

Cottage Cheese Salad
1 sheet lavash bread
2 teaspoons canola oil
mild paprika, to sprinkle
16 red oakleaf lettuce leaves
2 tablespoons chopped fresh chives
500 g cottage cheese
200 g red grapes
1 medium carrot, grated
¼ cup alfalfa sprouts


  1. Preheat oven to moderate 180°C. Brush lavash with oil, and sprinkle lightly with paprika. Cut in half lengthways, then across into 16 strips. Place on baking tray and bake for 5 minutes or until golden. Cool on a rack.
  2. Wash and dry lettuce thoroughly. Combine chives with cottage cheese. Arrange with other ingredients on individual plates, with four lavash crisps on the side. Serve immediately.

Note: Lavash is oblong flat bread. It is available from supermarkets.
