- Preheat the oven to slow 150°C (300°F/Gas 2). Spread the nuts in a single layer on a baking tray and roast for 10 minutes.
- Whisk the egg white until frothy, then add the nuts, curry powder, cumin and 1 teaspoon salt. Toss together and return to the oven for a further 10–15 minutes, then allow to cool.
