- 2 packets Lattice Squares
- 250g cream cheese
- 250g butter
- 250g sugar
- 1 tablespoon gelatine
- 4 tablespoons hot water
This is an easy and quick dessert that delivers the taste of a biscuit cheesecake with a quarter of the effort.
Beat cream cheese and butter, when smooth add sugar and beat again till combined. Put gelatine in a small bowl, add boiling hot water and stir until dissolved. Add to cream mixture.
Lay one packet of Lattice Square biscuits glossy side down on a flat surface. You can use grease-proof paper to avoid a messy bench.
Spread your cream mixture over each biscuit.
Place the remaining biscuits over the top, glossy side up and they are ready to eat.
