Ingredients
2 1/2 cups plain flour.
1 tbsp baking powder.
1/4 cup cocoa.
100g butter, cubed.
1 cup raw caster sugar.
2 free-range eggs.
1 1/2 cups milk.
100g dark chocolate buttons.
Method
Preheat the oven to 180C.
Sift the flour, baking powder and cocoa into a large bowl. Rub the butter into the flour mixture. Add the sugar and stir to combine. Whisk the eggs and milk together and slowly add to the dry ingredients, mixing gently until just combined.
Spoon the batter into 18 greased muffin tins until about two-thirds full. Gently push the chocolate buttons into the batter of each muffin. Bake for 10-15 minutes, or until a skewer inserted comes out clean. Cool on a wire rack.
