Easter rocky road
This rocky road is a twist on the traditional version. It is nut-free, kid friendly and has tasty speckled Easter Eggs, making it the perfect handmade Easter gift for family and friends.

- 150 grams mini marshmallows
- 280 grams mini speckled Easter eggs (mini Easter eggs with a candy shell)
- 350 grams lolly snakes
- 750 grams milk chocolate
Cut snakes cut up into 1.5cm pieces and set them aside.
Break chocolate up into chunks and place in a large microwave safe dish. Heat in microwave for one minute, then stir. Repeat this step, with 15 - 30 seconds bursts in the microwave until the chocolate is melted and remove from the microwave.
To the melted chocolate add mini marshmallows, snakes and speckled Easter eggs. Mix with a metal spoon until well combined.
Line a dish with baking paper (a standard lasagne dish works well) and pour chocolate mix into it, using the spoon to ensure it is evenly spread. Place the dish in fridge for a couple of hours to set.
Once firmly set, cut the rocky road into chunks and enjoy!
Notes: To make them into an Easter gift, use some party favour boxes and fill with rocky road, then wrap with cellophane and tie with ribbon.
