Egg sandwiches

Ingredients

Ingredients: curried egg

  • 3 hard-boiled eggs, cooled and peeled
  • 1½ tablespoons mayonnaise
  • 2 teaspoons softened butter
  • 2 teaspoons curry powder
  • 4 slices rye bread, buttered, crusts removed

Egg and watercress

  • 3 hard-boiled eggs, cooled and peeled
  • 1½ tablespoons mayonnaise
  • 1 teaspoon softened butter
  • 1 tablespoon finely chopped chives
  • 1 small handful watercress, leaves only
  • 4 slices wholegrain bread, buttered, crusts removed

Egg, olive and rocket

  • 3 hard-boiled eggs, cooled and peeled
  • 1½ tablespoons mayonnaise
  • 1 teaspoon softened butter
  • 2 tablespoons finely shredded basil
  • 1 tablespoon chopped kalamata olives
  • 4 slices white bread, buttered, crusts removed
  • 1 handful baby rocket (arugula), washed and dried

Method

1. To make the curried egg sandwiches, put the eggs, mayonnaise, butter and curry powder into a bowl. Mash together with a fork until evenly mixed but still slightly chunky. Season well with salt and freshly ground black pepper. Spread the egg mixture onto two slices of bread, top with the remaining slices of bread, cut into quarters and serve.

2. To make the egg and watercress sandwiches, put the eggs, mayonnaise, butter and chives into a small bowl. Add salt and freshly ground black pepper, then mash together with a fork until evenly and well mixed but still slightly chunky. Wash and dry the picked watercress leaves. Spread the egg mixture onto two slices of bread, top with the watercress and the remaining slices of bread. Cut into quarters and serve.

3. To make the egg, olive and rocket sandwiches, put the eggs, mayonnaise and butter into a small bowl. Mash together with a fork until evenly mixed but still slightly chunky, then add the basil leaves and olives. Stir well, then season to taste. Spread the egg mixture onto two slices of bread, top with the rocket, then the remaining slices of bread. Cut into quarters and serve.
