Baked Herb Ricotta Pie

- 500g fresh ricotta
- 250g grated parmesan cheese
- 1 egg
- Red capsicum (half chopped)
- Sprinkle of Master Foods Italian Herbs
A deliciously quick, light and easy pie perfect for summer entertaining or by adding a salad for a family meal.
Preheat oven to 180 C. Lightly grease a 4 cup capacity ovenproof dish.
Combine ricotta, parmesan, herbs, egg and capsicum in a bowl and mix until all are combined. Spoon mixture into prepared oven dish. Smooth the top with the back of a spoon.
Bake for 35 minutes or until golden and baked through. Remove from oven and serve hot or cold according to preference.
