Ingredients
- 8 rashers of bacon
- 1 onion
- 1 or 2 diced carrots
- 1/2 capsicum
- 8 mushrooms chopped
- 1 zucchini
- 1kg chicken thighs, chopped
- olive oil as needed
- 1 tbs plain flour
- 1/2 cup chicken stock
- 2 tsp Sambal Olek (or other chilli)
This is my family's favourite dinner. I serve it either with mashed potatoes or pasta (but they really love the pasta).
Method
In a large casserole dish fry off bacon and onion. Add chopped vegetables and continue to cook. Add a splash of water if it's sticking to the pan. Cook on stove top for approx 5 - 10 minutes.
When vegetables have cooked, tip them into a bowl. Heat pan and, in batches, fry chicken. For the last batch, add flour and cook to absorb juices. Put all the chicken and vegetables back in the dish. Add stock and sambal olek (adjust according to how much your family likes spices).
Put lid on and cook in a medium oven for approx 40 minutes. Serve with either veggis and potato or in bowls with pasta (sprinkle with cheese if you like - my daughter loves it).
