  • 2 tomatoes
  • 2 teaspoons soy sauce
  • 1 tablespoon tomatoe sauce
  • 2 teaspoons curry powder
  • Vegetables
  • 1 large carrot
  • 2 small zucchinis
  • 1/4 cup peas
  • 1/4 cup corn
  • 1/2 a red capsicum
  • 1/2 a green capsicum
  • 1 stick celery
  • 1/4 cabbage
  • Noodles
  • 1 cup of water
  • 2 packs of 2 minute noodles

I like to call this savoury mince "Sneaky Mince", as your can add loads of vegetables to it. If your children don't like their veggies you can grate them and the kids won't notice.

Method

Finely dice or grate all of your vegetables and set aside.

In a medium sized fry-pan brown the beef mince and onion. Add garlic and curry powder, fry for a minute or two. Then add finely diced tomatoes, soy sauce and tomato sauce.

Add all for you veggies and cook until tender (If you place a fry-pan lid on it will speed up cooking time).

Just before serving add the two minute noddles (don't use the flavor packets that come with the noodles - way too salty) add enough water so the noodles cook but not too much as this dish only needs a little sauce.

Call the family and enjoy watching them tuck into their meal.
