Savoury corn cakes

- 1/4 cup instant polenta
- 1 tbsp flour or corn flour
- 1/8 tsp baking powder
- 125g can creamed corn
- small pinch salt (optional)
- pepper to taste
- 1/4 cup frozen peas and corn
- 1 tbsp oil
A delicious and healthy child-friendly treat. Serve as a snack or as a side with steak and vegetables.
Mix the dry ingredients together until combined.
Add the oil and creamed corn and stir until it forms a thick batter. Stir through the frozen peas and corn.
Spoon into an oiled patty pan tin. Bake at 180C for approximately 15 minutes.
