Ingredients

  • 1 carrot
  • 1/4 cauliflower
  • 1/2 or a small sweet potato
  • 1/4 broccoli
  • 1 egg (beaten)
  • 1 cup flour
  • 1 cup breadcrumbs
  • 1 cup oil (to fry)

This is a great way to encourage young children to enjoy their vegetables. A vegetarian dish that looks like schnitzel and tastes amazing.

Method

Cook carrot and sweet potato for 15 minutes in boiling water than add cauliflower and broccoli for five more minutes. When cooked strain and leave to cool.

Mix vegetables in a blender, add a pinch of salt if desired, you may need to add a small amount of flour if the consistency is too soft. Shape the mixture into patties, coat in flour, then dip in the beaten egg and coat well with breadcrumbs.

Heat oil in pan and fry patties until they turn a toasty, sunburnt colour. They are now ready to enjoy either hot or cold. You can also add your favourite sauce and throw together a healthy salad to accompany the main dish.
