- 4 lamb shanks
- 1 can diced tomatoes
- 1 jar tomato pasta sauce
- 1 clove garlic (crushed/thinly sliced)
- 1 small onion (diced)
- 1 cup basil leaves (roughly chopped)
- 4 tablespoons tomato paste
- 1 tablespoon brown sugar
- A sprinkle of salt and pepper
- Mashed Potato and Snow Peas
- 4 potatoes (peeled and cut into chunks)
- 2 cups snow peas
- 2 tablespoons butter
- 2 tablespoons milk
- A pinch of salt
This is a recipe to shock everyone's taste-buds into pure delight. Your dinner parties will be remembered from here on with such a tasty, unforgettable meal. Slowly cooked, succulent Lamb Shanks that have the meat falling off the bone, covered in a rich tomato, basil and garlic sauce, poured over a bed of soft, fluffy mash potato, and a side of green, crispy snow peas.
Method
Place all of the above slow cooker ingredients into the slow cooker. Mix using a wooden spoon. Place on low cooking setting for 5-7 hours. Stir every 2-3 hours if needed.
When lamb shanks are done, boil potatoes in a saucepan until cooked. Drain. Add butter, milk and salt, and beat using electric beaters until lump-free and fluffy.
Place snow peas in a small saucepan and boil for 5 minutes. Drain
Place snow peas in a small saucepan and boil for 5 minutes. Drain Plate up: Place the mash on each plate. Place a lamb shank on top of mash and pour sauce over top. Lastly add the snow peas on top. Garnish with fresh chopped basil. Serve.
