Soft tacos with meatballs and salsa

Using an old El Paso soft taco kit, combine meatballs with tacos and you are left with a family meal your kids will love.

Ingredients

  • 500 g of pork or beef mince
  • 1 egg
  • 1/4 cup dry breadcrumbs
  • 1 teaspoon of finely grated lemon zest
  • 1 cup finely chopped fresh coriander, extra
  • 1 large tomato finely chopped
  • 1 cucumber finely chopped
  • 2/3 cup light sour cream
  • Baby cos lettuce leaves
  • Old El Paso Extra Mild Super Tasty soft taco kit

Method

Combine mince, egg, breadcrumbs, lemon zest and coriander.

Roll tablespoons full into small balls (makes aprox 30).

Heat a little oil in a frying pan and cook over medium heat for 5-6 minutes until browned and cooked through.

Add extra mild taco cooking sauce and water and simmer for 2 minutes.

To make fresh tomato salsa, combine extra coriander, tomato and cucumber.

Mix sour cream and sour cream seasoning until well combined.

For warm tortillas open tortilla pouch, discard freshness sachet and microwave on high for 35 seconds. Or remove from pouch and heat in oven at 180?C for 10 minutes.
