Ingredients

  • 1 large zuchinni grated
  • 1 cup pumpkin grated
  • 1/2 cup cheese grated
  • 1/2 small onion finely diced
  • 4 eggs
  • 1/2 cup self-raising flour
  • 1/2 cup of milk
  • salt and pepper to taste

A healthy slice that is perfect school lunch or an easy family meal served with a side salad.

Method

Preheat oven to 220°C. Grease pan. Place all vegetables and cheese into a bowl and mix.

Mix the eggs, self-raising flour and milk together and add to the grated ingredients.Add salt and pepper to taste. Mix well.

Pour mixture into greased tin and cook for 20 minutes. Cut into 12 slices and serve hot or cold.
