Ingredients
- 1kg chicken mince
- 1 red capsicum, finely chopped
- 1 green capsicum, finely chopped
- 2 garlic cloves, crushed
- 2 tsp grated fresh ginger
- 1 tbs lemon juice
- 1 tbs lime juice
- 2 tbs tamari (or soy sauce)
- 2 tbs sweet chilli sauce
- 3 tbs coconut oil
- Fresh mint leaves
- 1 iceberg lettuce
Method
In a small bowl add the lemon juice, lime juice, tamari (or soy sauce) and sweet chilli sauce and set aside. Add the coconut oil to a large frying pan and heat on medium high. Add in the capsicum, ginger and garlic and cook for a couple of minutes stirring constantly.
Add the chicken mince to the frying pan, using a wooden spoon or the like to break it up as it cooks. Once the chicken is cooked add the sauce mixture and cook for a further 2 -3 minutes.
Serve in lettuce cups, topped with torn mint leaves.
