Fast and fresh chicken lettuce cups
This is an easy meal you can prepare quickly when you come in from activities with the kids after school. The simple but fresh ingredients give it great flavour and it can be easily adapted to use up any veggies you have in the fridge.

- 1kg chicken mince
- 1 red capsicum, finely chopped
- 1 green capsicum, finely chopped
- 2 garlic cloves, crushed
- 2 tsp grated fresh ginger
- 1 tbs lemon juice
- 1 tbs lime juice
- 2 tbs tamari (or soy sauce)
- 2 tbs sweet chilli sauce
- 3 tbs coconut oil
- Fresh mint leaves
- 1 iceberg lettuce
In a small bowl add the lemon juice, lime juice, tamari (or soy sauce) and sweet chilli sauce and set aside. Add the coconut oil to a large frying pan and heat on medium high. Add in the capsicum, ginger and garlic and cook for a couple of minutes stirring constantly.
Add the chicken mince to the frying pan, using a wooden spoon or the like to break it up as it cooks. Once the chicken is cooked add the sauce mixture and cook for a further 2 -3 minutes.
Serve in lettuce cups, topped with torn mint leaves.
