Fish Cocktails
250 g (9 oz) boneless white fish fillets
2 tablespoons plain (all-purpose) flour
1 egg white
15 g (½ oz/¼ cup) crushed corn-based cereal flakes
mayonnaise, to serve
Method
- Preheat the oven to 180°C (350°F/Gas 4). Cut the fish into 3 cm (1¼ inch) cubes. Coat the fish pieces in flour and shake off any excess.
- Whisk the egg white in a small bowl. Dip the fish, one cube at a time, in the egg white, then coat with the crushed cereal flakes. Place in a single layer on a baking tray. Bake for 15 minutes, or until golden, turning the pieces over after 10 minutes. Serve hot with mayonnaise or your toddler's favourite seafood sauce.
