French Toast with Crispy Prosciutto
60 ml (2 fl oz/¼ cup) cream or milk
3 eggs
3 tablespoons caster (superfine) sugar
pinch of ground cinnamon
8 thick slices bread
85 g (3 oz) butter
1 tablespoon olive oil
12 slices prosciutto
maple syrup, to serve
Method
- Put the cream, eggs, sugar and cinnamon in a wide, shallow bowl and mix together. Soak the bread in the egg mixture, one slice at a time, shaking off any excess.
- Melt some of the butter in a frying pan over medium heat. When the butter is sizzling, add the bread to the pan and cook until golden brown on both sides.
- Transfer the cooked French toast to a warm plate and cover with foil or keep warm in a low oven. Cook the remaining bread in batches, adding more butter as needed.
- In a separate frying pan, heat the oil. When hot, add the prosciutto and fry until crisp. Remove and drain on paper towels. Place the prosciutto on top of the French toast, drizzle with maple syrup and serve.
