Fruit Poached in Red Wine
Fruit Poached in Red Wine
3 pears, peeled, quartered and cored
3 apples, peeled, quartered and cored
50 g (¼ cup) sugar
1 vanilla bean, cut in half lengthways
2 small cinnamon sticks
400 ml red wine
200 ml dessert wine or port
700 g red-skinned plums, halved


  1. Put the pears and apples in a large saucepan. Add the sugar, vanilla bean, cinnamon sticks, red wine and dessert wine and bring to the boil. Reduce the heat and gently simmer for 5–10 minutes, or until just soft.
  2. Add the plums, stirring them through the pears and apples, and bring the liquid back to a simmer. Cook for another 5 minutes, or until the plums are soft.
  3. Remove the saucepan from the heat, cover with a lid and leave the fruit to marinate in the syrup for at least 6 hours. Reheat gently to serve warm, or serve at room temperature with cream or ice cream and a biscuit.
