1. Crush four of the garlic cloves and thinly slice the rest. Sprinkle the lemon juice over the sliced mushrooms.
2. Heat the olive oil in a large frying pan and add the crushed garlic and chilli. Stir over medium–high heat for 10 seconds, then add the mushrooms. Season with salt and pepper and cook, stirring often, for 8–10 minutes. Stir in the sliced garlic and parsley and cook for another minute. Serve hot.
NOTE: You can also use field, swiss brown or any wild mushrooms for this recipe, but take care to adjust the cooking times if you use the more fragile wild mushrooms.
