Ingredients
- 1kg chicken mince
- 2 carrots, grated
- 1 ½ cups baby spinach, finely chopped
- ½ rice crumbs
- ½ tsp garlic powder
- ½ tsp oregano
- ¼ tsp salt
- 3 tbsp tomato paste
- 2 tbsps coconut oil
Method
Place mince in medium size bowl. Then add carrots, baby spinach, rice crumbs, garlic powder, oregano, salt and tomato paste. Mix well, using hands to combine the ingredients.
Using 1/3 cup of the mixture roll the mixture into a thin sausage shape. Set on a chopping board as you make the others. The sausages can be made in advance and cooked later.
Heat oil in a large frying on a moderate heat. Add sausages and fry for a few minutes each side, until cooked.
Notes: If you do not need these sausages to be gluten free you can use bread crumbs.
