Individual Christmas Pudding

Nothing sings Christmas like Christmas pudding and here is one for everyone!

Ingredients

  • 225g brown sugar
  • 225g unsalted butter
  • Grated rind of one orange
  • 4 eggs, beaten
  • 225g raisins, chopped
  • 50g mixed peel
  • 225g sultanas
  • 100g currants
  • 50g glace apricots or pineapple, chopped
  • 150g plain flour
  • Half tsp ground ginger
  • 1 tsp mixed spice
  • Half tsp cinnamon
  • 50g almonds, chopped
  • 50g grated carrot
  • 100g soft white breadcrumbs
  • Brandy

 

Method

 

10 150ml pudding moulds

 

Mix raisins, sultanas, currants, mixed peel and apricots together in a large bowl. Sprinkle liberally with brandy and leave to soak overnight.

 

Cream together brown sugar, butter and orange, then add the beaten eggs.

 

Sift the plain flour, ginger, mixed spice and cinnamon together.

 

Now add fruit mixture, dry ingredient mixture, almonds, carrot and breadcrumbs gradually and alternately to butter and sugar mixture.

 

Butter the moulds thoroughly and line the base of each with a circle of greaseproof paper. Spoon the mixture in and cover tightly with buttered aluminium foil. Cook in a baking pan filled with enough water to come halfway up the sides of the moulds. Bake in a moderate 180C oven for 1 1/2 hours. When done, the pudding will feel firm to touch and an inserted skewer will come out clean.
